Sauteed Calamari with oven cooked vegetables (Zourit Vov)

Ingredients

1 large fresh Calamari (Zourit Vov) (You can use frozen ones too) cut in pieces
1 Green capsicum cut in strips
1 Yellow capsicum cut in strips
6 Green beans cut in half
3 Medium size tomates cut in wedges
1 onion chopped
4 cloves garlic chopped
1 thumb size piece of ginger chopped
Fresh basils and parsley
3 tbsp olive oil
Oyster Sauce
Light soya sauce
Salt/Pepper


Directions

Place the pieces of capsicum, green beans, tomatoes and fresh herbs in a baking tray.
Drizzle 2 tbsp of olive oil on the vegetables and herbs and sprinkle salt/pepper and place in hot oven for 10 minutes.

In a hot wok add 1 tbsp of olive oil.
Add chopped onion, garlic, ginger and fry until tender.
Add the pieces of Calamari to the wok and stir fry adding a few drops of oyster sauce and light soya sauce until cooked.
Turn off heat and add the oven cooked vegetables and herbs to the wok and mix together.
Add salt and pepper to taste
