Shoemaker fish soup

2 medium size Shoemaker fish (cordonier)
2 small Onions
6 cloves minced Garlic
1 inch minced Ginger
6 Bilimbi
1Fresh ripe tomato
Half of a Fresh lemon
1 scotch bonnet chilli (piment cabri)
Fresh thyme
Fresh parsley
Fresh spring onion


Cut the fish in 2 or 3 depending on the size
Season with salt and pepper and put aside
In hot oil brown the onion, garlic and ginger
Add tomatoes and bilimbi, whole chili and fresh herbs
Add fish with 1/2 cup of water, cover and let cook for 5 minutes
Add more water to cover fish 
Add salt to taste
Add a squeeze of fresh lemon
Simmer for 10 minutes then turn off heat 

Best serve with steamed rice and a chutney or fresh chilli sauce
