Vegetables Fritters

1 Tbsp Olive oil
1/2 cup vegetables broth
500g plain white flour
2 Eggs
1 Aubergine cut into small cubes
1 Carrot grated
1/4 Cabbage (red or white) chopped
1 Onion chopped
6 Green beans cut in small piecs
4 Cloves garlic crushed
1 inch ginger crushed
Fresh Parsley
Fresh Spring onions
Oil for frying


In a bowl whisk the eggs until fluffy, then add the olive oil and vegetables broth and mix.

In a separate bowl add the flour, salt, pepper and mix.

Add the liquid mixture to the flour mix and stir until well combined.

Add the vegetables, spices and herbs to the batter and combine well adding salt and pepper to taste.

Deep fry until golden.

The fritters be serve with sweet chilli sauce.
