Braised Oxtail in red wine

1 Kg Oxtails
1 cup beef Stock diluted
2 Cups of red wine
1 tbsp oil
2 tbsp oyster sauce
2 medium sized carrots cut into rounds
3 potatoes each cut into 4 pieces
6 green beans cut in half
1 onion chopped in big pieces
3 Bay leaves
Fresh thyme
3 inch ginger roots
4 cloves garlic


Season the oxtails with salt and pepper and put aside
In a hot pot, add 1 tbsp of oil and add the oxtails one by one in a single layer and let them sear turning occasionally until they turn brown on both sides.  After all oxtails has been browned, place aside.

Add garlic, ginger, chopped onion to the pot's drippings and brown them.
Add the oxtails, vegetables, fresh thyme, bay leaves, oyster sauce and pour beef stock and red wine enough to cover the meat.

Place the lid and cook until the meat is tender and the is sauce reduced and thickened. 

Add salt and pepper to taste
